Luffa is edible! Picking luffa at the right stage is essential for a great tasting luffa. look for one that is small and not to think as the fruit will still be nice and tender. Once the luffa gets larger it begins to form the sponge like structure becoming tough and unenjoyable for eating. I prefer to cook mine with butter and garlic and the luffa adds a nice subtle nutty flavor similar to a squash or zucchini.
